The Wheat Free Series: Smoked Ham, Spinach, Rocket, Pepper & Tomato Omelette

Ingredients
  • Smoked Ham *NOT CRUMBED HAM THIS WILL CONTAIN WHEAT*
  • 3 Large Free Range Eggs
  • Spinach
  • Rocket
  • Baby cherry tomatoes
  • 1 red pepper
  • Semi Skimmed Milk

Step 1
Whisk together 3 large free range eggs in a bowl

Step 2
Chop your ingredients making your sure the peppers and ham are chopped up nice and small so they’ll cook alongside the eggs.

Step 3
Using the same spray oil as last week, spray x2 in a frying pan letting this heat up on a medium heat again also heating up your grill on a low temperature. Once you are playing with heat, put your ingredients into the whisked eggs, the spinach and rocket often gets wrapped up but don’t worry too much about this.

Step 4
Pour your eggs and ingredients into your pan and let the bottom begin to take shape. As it is taking shape just ensure that the ingredients and eggs are all forming. Once partially formed place it under your grill making sure your grill is turned up to a slightly higher heat. The grill will help the eggs to rise and prevent you from ending up with scrambled eggs as I always used to when just making an omelette with a frying pan.

Step 5
Once your eggs have risen and you now have a firm egg base take it out from the heat and serve with either orange juice if its breakfast or a sparkling flavoured water for lunch.

*This can receive can be served with wheat if you’re using breadcrumbed ham so to avoid wheat as I do buy carvery cut ham from your supermarket ensuring it is wheat free.*
